Because 2017 is all about minimising not just food waste, but drinks waste, too — specifically the huge quantities of rinds, leftover syrups and bits of other so-called rubbish that’s destined for a black bag out the back of your favourite... And where better to put such waste than into a brand new cocktail. Ryan Chetiyawardana — aka Mr Lyan — creates what he calls ‘closed-loop’ cocktails at his two bars, White Lyan in Hoxton and Dandelyan at the Mondrian: drinks that incorporate the waste of cocktails that have gone before. Hence a drink such as the Arsenic Waltz cocktail on the Dandelyan’s new Vices of Botany menu, which uses the excess cucumbers pre-sliced for G&Ts.
The Bad Waitress is set to unveil its second location this week, showing off sparkling new digs, a full bar and a major Twin Cities name shaking and stirring the drinks. But the biggest sell might be the familiar face manning the bar. Johnny Michaels, considered by many the godfather of the modern cocktail movement in Minnesota from his days at the former La Bell Vie, has returned to the Twin Cities after a stint at a White Bear Lake bar. And he’s bringing with him a sprawling drink list that he hopes will toe the line between crafted, fussy cocktails and quick drinks. “You’ve got to make them fast and they’ve got to be consistent,” Michaels said.
