, the city is beginning to bustle with diverse flavors, but a restaurant specializing in one particular type of cuisine has been missing: Korean. Not one, but two orders of dumplings kicked off my evening of delectable Korean cuisine. Dumplings are one of my favorite foods, so I was very eager to see how the fried dumplings were perfectly golden brown, each providing just enough crunch to contrast the spongy, meaty inside. But, delivered in a bamboo steamer basket, the steamed dumplings stole the show. Each was plumply stuffed with meat and veggies, and I pocketed each dumpling whole in my mouth, not wanting to risk any loss of flavorful steam by taking a bite. Sides consisting of little individual bowls of kimchi, pickled radish and spicy cucumber were dropped off as I ate my way through the dumplings, and, if I so desired, could be refilled as I began my entree.
Sometimes we top challah with sesame seeds, other times with poppy seeds. “Modernist Bread,” a new cookbook, says that doing so will make your dough easier to handle, your yeast more active and your bread softer. It takes something of a leap of faith to trust Nathan Myhrvold, the one-time chief technology officer at Microsoft, with your sacred bread.

My annual kitchen gift guide is now 14 years old. Over the years I’ve played with the format, trying to keep it fresh even when many of the recommendations stay the same from year to year. (A classic never goes out of style …)Last year I switched from grouping by price to grouping by giftee. And this year, I decided to ask my Twitter followers what they wanted to see more of.The answer, it turned out, was cookbooks, more gifts for young people just building their first home, upgrades for...
Eggs with your coffee? In Vietnam — a culture that loves caffeine at least as much as Americans do — locals put eggs IN their coffee.First, a bit of history: Nguyen Van Dao says that back in 1946, his father Nguyen Van Giang, a barman at the Sofitel Legend Metropole Hotel in Hanoi, ran out of milk to serve with the coffee. In a pinch, he whipped up a mixture of egg yolks and condensed milk, and the rest was history. As popularity for the beverage grew, so did the business to the Giang Coffee...
Thinking of buying a new hand mixer? Models range in price from about $15 to $100. To see if you really need to spend top dollar, we put five of the most popular through their paces, testing them on simple cake batters as well as heavy cookie dough. Then we checked out how well they whipped egg whites. All the models we tested worked well and accomplished their tasks with ease. We wouldn't hesitate to recommend any of them. So, how do you choose? Not necessarily by price. If you are an...
