Readers have shared plenty of stories about the lashings of liquid and scant solids in their canned food, wondering if they were being ripped off. We took five popular canned food categories – tuna, corn, peaches, chick peas and beetroot – and drained the liquid and weighed the solid contents to compare our findings with what's on the label. We spot-checked 27 different leading brand and supermarket own-brand canned food products – two samples of each. Only four of the 54 cans we opened contained exactly the amount of food that's labelled – but that's not the bad story it may seem. Four cans contained less food (the largest shortfall we recorded was six percent less – a can of Aldi's New Season Sliced Beetroot). But 46 of the 54 cans opened – that's 85% – actually contained more food than declared.
But not everyone can afford to pay farmers’ market prices or to front hundreds of dollars for a cow share and then try to fit all the vacuum-sealed meat into their freezer. For this reason, a host of online resources are now available to ship the most sustainable meats directly from family farms to consumers’ doors. All in manageable quantities at a reasonable price. Take Seattle-based Crowd Cow The start-up stole the scene in 2015 with $2 million in venture capital investments and a first-of-its-kind model for selling meat online. In effect, Crowd Cow founders Ethan Lowry and Joe Heitzeberg used their tech backgrounds to bring the ranch to the internet. Crowd Cow offers whole animals for sale in online “events,” one cow at a time—in retail-cut packages—until they’re sold.

Pick up just about any cookbook and you will find a hodgepodge of units—pinches, teaspoons, cups, ounces. Take, just for example, the recipe for butternut squash gnocchi in The One-Block Feast, an appealing new book by the staff of Sunset Magazine. It calls for, among other things, 3 pounds of butternut squash, 1½ tablespoons of honey, ¾ teaspoons of sea salt, 9-10 ounces of chard, and a...

Whaddya mean I can just pour ingredients onto either of these smart scales until they tell me to stop and I get delicious homemade cookies for my trouble?! What sort of black magic is this? It's called "baking by weight" and it will change the way you look at cooking. Baking requires a far more precise hand than regular cooking—the easiest way to bake something inedible is to bungle the measurements. Baking by weight is more precise than baking by volume, though it can seem a strange and...
