Jackfruit seeds could substitute cocoa beans to make chocolate - India Today

Jackfruit seeds produce chocolaty aromas and could be a potentially cheap, abundant substitute for making chocolates, say scientists in the light of the looming global cocoa bean shortage. Researchers from University of Sao Paulo in Brazil found that compounds found in jackfruit seeds produce many of the same aromas as processed cocoa beans and are a potentially cheap, abundant substitute for use in chocolate manufacturing. This yield is not expected to increase significantly in the next decade, but estimates suggest that worldwide demand for these beans will grow to 4. 5 million tonnes by 2020 researchers said. Researchers made 27 different roasted jackfruit seed flours by acidifying or fermenting the seeds prior to drying.

Chance of rain 50%. Tonight Scattered thunderstorms early, then mainly cloudy overnight with thunderstorms likely. Chance of rain 80%. What started out as a hobby – growing cacao – has turned into a way of life for Ben VanEgtern and his business partner Adam Potter. They run Puna Chocolate Company, featuring products made from cacao they grow in Hawaii. “We made chocolate for ourselves, friends and family,” VanEgtern said. Named for the region where they grow cacao trees on Hawaii’s Big Island, Puna Chocolate Company planted its first cacao orchard in 2013 and now offers its chocolate online and sells their products at farmers markets in Illinois, and at chocolate... VanEgtern grew up on a dairy farm and was active in the FFA before he graduated from Waupun High School in 2001. After high school VanEgtern served.

From Bean To Bar: Crafting Chocolate The Traditional Mayan Way

Photo by Ryan YoungPatricia Tsai at ChocoVivo“When I went down there, it was really an eye-opening experience,” recalled Tsai. “Because the way that they treat chocolate, it was truly food. It was a completely different mindset, so I think that’s why there was this shift in perspective.”Unlike the silky, sweet chocolate candy modern consumers are familiar with, the chocolate consumed by the Mayans was drunk like a cup of coffee. It was thick, dark and quite bitter, but provided a natural...

Geeks are using science to make the best chocolate ever

Rob Anderson is a geek. So he makes chocolate for other geeks, or, more accurately, "people who really like chocolate and geek out about it."What does he mean by that? If you change one step of the chocolate-making process, you change the taste of the resulting chocolate entirely. And Anderson wants to show you exactly what that means. Fresco Chocolate, his company, roasts beans four different ways and conches (aka aerates and stirs) chocolate four different ways to create totally unique bars...

The TCHO factory tour is rich, chocolatey goodness for bean-to-bar nerds

Catherine Liu spills the beans about cacao at the TCHO Chocolate factory tour. Photo: Sarah HanBefore you even arrive at the TCHO Chocolate factory in southwest Berkeley, you should know there is a somewhat long list of rules and requirements to be able to attend. First, guests must be at least eight years old, and all minors must be accompanied by an adult. Fine and good. There will be no Augustus Gloops getting sucked into tubes here. But the rules go on. There’s a checklist of things you...

The Secrets to Making Fine Chocolate—and Great Employees

“The answer is chocolate. The question is pretty much irrelevant.” While that anonymous quote may be more fun than fact, when it comes to developing human resources, chocolate may, indeed, be the answer. And as unlikely as that may seem, there are many parallels between making fine chocolate and enabling employees to perform at their best. Before we make that connection, you need to understand what goes in to the process of growing and making fine chocolate.Where We Get the “Food of the Gods”...
