My foodie friend Agha Imran informs me that there are now two supermarkets in Islamabad where you can get virtually every Chinese ingredient you could want. I suppose this is one of the spin-offs of the China-Pakistan Economic Corridor, and is greatly to be welcomed. It’s just a matter of time before speciality shops and restaurants spread to other cities to cater to the growing Chinese presence in Pakistan. One new authentic restaurant I checked out with Imran and Azhar the other evening was the Wang Wang on Karachi’s Khayaban-i-Seher. But we had gone for the food, and were soon shown a very brief menu where everything centred around the classic hotpot. The hotpot has been a staple in China for at least a thousand years, and is especially popular in the winter.
The following recipe, which employs a healthy amount of chicken fat, is found in “ The Book of Schmaltz ” (Little Brown), the 2013 cookbook by Michael Ruhlman, a James Beard Award-winning food historian and former Palm Beach resident. Their collaboration produced delicious recipes, such as this one for luxurious matzo ball soup. With damp hands, form the matzo mixture into 4 balls, making them as big, smooth, and round as ping-pong balls. If you're making the soup right away, keep the matzo balls in the stock, covered. Make the soup: Bring a large pot of water to a boil, and ready an ice bath. Scoop out the onion with a strainer and dip the strainer into the bowl of ice water, stirring the onion till chilled.
